DIAKITE chocolate liquor is made of premium Forastero chocolate tree beans grown in West Africa. DIAKITE chocolate liquoris 100% natural chocolate in its pure form. It does not yet contain any sugar or additives that would turn it into a delicious home-made chocolate bar, or a glossy icing for a cake, or an exquisite set of sweets, or a wonderful cosmetic product. It is the Forastero beans that give chocolate such a rich taste and aroma that will be preserved when chocolate liquor is mixed with milk, freeze-dried fruits or nuts, or even when used to make enrobed bonbons.

Production technology

DK chocolate liquor is made from beans, the seeds of the chocolate tree:

• they are fermented to create a chocolate flavor, taste and color;
• roasting enhances the taste and aroma;
• mechanical crushing turns roasted beans into cocoa nibs, removing sprouts and cocoa husks.
• cocoa nibs are finely powdered and turns into liquid cocao-masscontaining about 52% cocoa butter;
• then cocoa nibs are cooled and packed.

A portion of chocolate liquor is pressed to separate the butter, which will be used in the production of chocolate mass. Production and commercial cocoa powders are produced from the cocoa solids.

Application

DIAKITE chocolate liquor can be used as an independent product, as well as:

• for making artisan and author's chocolate, bars, sweets, cakes and other confectionery products;
• for SPA treatments of chocolate wraps, cosmetic masks and massages;
• as a natural dye for marble filling in soap making.
